The flavours of the territory



Sapori del territorio (flavours of the territory): a title, but also a programme, a project desired and organised by Udine Confcommercio, from May to November 2008, involving forty-four restaurants spread across the whole province of Carnia from the Marano lagoon and across the hills and the plains.

Sapori del territorio: a way to recount and to illustrate the food of today with roots in the past. A choice of flavours, but also of values. A desire to recover and re-launch the pleasurable emotions and suggestions which never fade, always ready to acquire new vigour.

The flavours of a territory: To reinforce the memory which can recall, through food, a moment of one’s life, a meeting, a smile. At times, a perfume is enough to bring back that moment and make it real again. The memory of food is millenary, it is a part of our DNA and cannot be cancelled. It can lie dormant, but it is always there, ready to awaken at the slightest urge.

Traditions at table lead to the flavours of the territory, and vice versa: an osmosis between past and present: a long story created – at times with great fatigue – within the family, day after day. Those privations, those anxieties, have now been transformed into the pleasure of a flavour which is still intact because it has the timbre of the land of origin. Of course, it seems strange that all this can be a reason for pride in our super-technological day and age: having had the capacity to recover and enhance a concept – the origin of the products which create food – which does not seem to interest anyone. As we said, the memory of food cannot be cancelled.

History helps to understand the past, to read the present and to foresee the future. Also in food. A source of life and of pleasure in life.
